Recipe: Date Truffles
This one comes from the Velochef cookbook - recipes for cyclists in training and competition. So you know it’s healthy. It also happens to be yummy, and is probably the most-commented on food item in each of our Retreats and Zen Sessions!
20 stoned soft dates (we use Medjool dates)
10g rolled oats
2tbsp coconut oil
10g cocoa powder
Chopped hazelnuts, pistachios or dessicated coconut, to decorate
Chop the dates
Mix all the ingredients with a spoon and put in the fridge. Leave for about an hour.
Take the mixture out when solidified, and roll into little balls using your hands
Roll the balls in the chopped nuts or coconut.
